Classic Cottage Pie in Individual Pots

When it comes to pies, British pies are true classics, and few are as comforting and traditional as cottage pie. With its rich, savoury meat filling and creamy mashed potato topping, this dish has stood the test of time as a hearty, home-cooked favourite. Baking them in individual pots adds a charming touch and makes serving even easier, whether you're preparing a cozy family meal or hosting a dinner with friends.


Ingredients

For the Meat Filling:

  • 1 lb (450g) ground beef

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 1 carrot, diced

  • 1/2 cup peas

  • 2 tbsp tomato paste

  • 1 tbsp Worcestershire sauce

  • 1 cup beef broth

  • 1 tsp fresh thyme (or 1/2 tsp dried)

  • Salt and pepper to taste

  • 1 tbsp olive oil


For the Mashed Potato Topping:

  • 2 large potatoes, peeled and diced

  • 2 tbsp butter

  • 1/4 cup milk

  • 1/4 cup shredded cheddar cheese (optional)

  • Salt and pepper to taste

  • Rosemary to garnish



Instructions

  1. Prepare the Filling: Heat olive oil in a pan over medium heat. Add onions and garlic, sautéing until fragrant. Add the ground beef and cook until browned. Stir in carrots, peas, tomato paste, Worcestershire sauce, thyme, salt, and pepper. Pour in the beef broth and let it simmer for about 10 minutes until slightly thickened.

  2. Make the Mashed Potatoes: While the filling simmers, boil the potatoes in salted water until fork-tender. Drain and mash with butter, milk, salt, and pepper. Stir in cheddar cheese if using.

  3. Assemble the Pies: Preheat oven to 375°F (190°C). Divide the meat filling into individual ramekins or oven-safe dishes. Spoon the mashed potatoes on top and smooth the surface with a fork to create a rustic texture, stick in the rosemary and a little drizzle olive oil to help crisp the topping.

  4. Bake: Place the ramekins on a baking sheet and bake for 20-25 minutes, or until the tops are golden and slightly crispy.

  5. Serve and Enjoy: Let them cool for a few minutes before serving. Serve with steamed vegetables or a salad.
