Ingredients
For the Meatballs:
500 gr. ground turkey
2 cloves garlic, minced
1 small shallot, finely chopped
1 tbsp fresh ginger, grated
1 tsp turmeric powder
1 tsp ground coriander
1/2 tsp ground cumin
1/2 tsp salt
1/4 tsp black pepper
1 tsp sesame oil or peanut oil
1/4 cup breadcrumbs
1 egg
For the Peanut Sauce:
3 tbsp cup peanut butter (natural, unsweetened)
1/2 cup coconut milk
1 tbsp soy sauce
1 lime zest & juice
1 tsp honey or maple syrup
1 tbsp grated ginger
1 tbsp mild curry powder
Instructions
Step 1: Prepare the Meatballs
In a mixing bowl, combine ground turkey, garlic, shallot, ginger, turmeric, coriander, cumin, salt, pepper, sesame oil, breadcrumbs, and egg. Mix until well combined.
Form into small meatballs.
Lightly grease your baking tray—olive oil works great for this. Bake the meatballs in a preheated oven at 190°C for about 30 minutes, turning them halfway through for even cooking.
Step 2: Make the Peanut Sauce
In a small saucepan over low heat, combine peanut butter, coconut milk, soy sauce, lime zest & juice, honey, curry powder and ginger.
Stir continuously, until the sauce comes to a boil.
Simmer for 2-3 minutes until smooth and well combined.
Step 3: Serve & Enjoy
Arrange the meatballs on a plate or serve over steamed rice.
Drizzle with peanut sauce and garnish with fresh cilantro, chopped peanuts, or lime wedges.
