Velvet Chicken Korma!

I got this recipe from a classic Indian cooking book by Mridula Baljekar. Admittedly, I’ve made a few tweaks—reducing the oil and swapping chicken thighs for chicken breast. But trust me, once you taste this, you’ll never cook Korma any other way!


This chicken korma is a rich, creamy, and aromatic dish made with tender chicken simmered in a luscious spiced yogurt and nut-based sauce.

This chicken korma is a rich, creamy, and aromatic dish made with tender chicken simmered in a luscious spiced yogurt and nut-based sauce. A classic from Mughlai cuisine, this restaurant-style Indian chicken curry is infused with fragrant spices creating a deep, complex flavor. Whether you prefer a mild or spicy version, this homemade chicken korma is easy to customize and pairs perfectly with fluffy basmati rice or warm naan. Follow my step-by-step guide to make the best creamy chicken korma at home with simple ingredients and traditional techniques!


Ingredients

  • 750 gr. chicken breast

  • Thumb size grated root ginger

  • 100 gr. Thick yogurt

  • 1-2 Garlic cloves

  • 1 Onion, finely sliced

  • 1 Tsp turmeric

  • 1 Tsp garam masala

  • 1 Tbsp ground coriander

  • 400 gr. coconut milk

  • 2 Tbsp ground almond

  • Juice of 1/2 lemon

  • Salt & pepper to taste


Instructions

  • Cut the chicken into cubes, mix it with ginger and yogurt, and let it marinate for 2–4 hours or overnight.

TIP: If I don`t have a lot of time than I reduce the marination time, it still tastes amazing!

 

  • Heat 1 tablespoon of olive oil in a pan and cook the finely sliced onions until golden brown. Add the spices and cook for a few minutes until fragrant. Stir in the chicken along with the marinade and cook for another 10 minutes. Pour in the coconut milk, reduce the heat, and let it simmer for 20–30 minutes. Add the almonds, mix well, and remove from heat. Finish with a squeeze of fresh lemon juice before serving.

 

  • Garnish with fresh coriander, serve with rice and naan bread.

  TIP: For a more nutritious weeknight meal, I like to add extra veggies like cauliflower, peppers, and sometimes even carrots. They soak up the rich, spiced sauce beautifully while adding extra vitamins, fibre, and a delicious texture to the dish!
