Ingredients

  • 4 Sea-bass fillets

  • 2 Lemons


For the Caper & Dill Sauce

  • 1 Tbsp butter

  • 1 Tbsp flour

  • 1 Cup vegetable or chicken stock

  • 2-3 Tbsp capers

  • 2 Tbsp chopped fresh dill

  • 1/2 lemon juice


Instructions

  • Preheat the oven to 200°C. Finely slice the lemon, setting aside a quarter to squeeze over the fish. Arrange the sliced lemons on a large baking tray and place the fish on top. Lightly drizzle with olive oil and lemon juice, rubbing it over both sides of the fish. Season with salt and pepper. Cover with foil and bake for 20-25 minutes, removing the foil halfway through to allow the top to crisp up.

 

  • Meanwhile, prepare the sauce. Start by making a simple roux: melt the butter in a saucepan over medium heat, then add the flour and stir until it forms a smooth paste. Slowly add the stock while continuously whisking. The key to a smooth, lump-free roux is to incorporate the liquid gradually, whisking constantly to ensure a silky texture.

 

  • Add the capers and dill, then continue whisking until the sauce comes to a boil. Reduce the heat and let it simmer for a few minutes until it thickens. Squeeze in the lemon and season to taste.

 

  • Once the fish is beautifully golden, serve it with the sauce alongside roasted potatoes, steamed vegetables, or a fresh salad.
