Ingredients
For the batter:
185 gr. butter
1 1/2 cup sugar
zest of 1 lemon
2 tbsp fresh lemon juice
4 eggs
1 1/2 cup flour
a pinch of salt
For the Glaze:
1 cup powdered sugar
2 tbsp fresh lemon juice
2 tsp lemon zest
Instructions
In a large mixing bowl, cream together the butter and sugar until light and fluffy. Mix in the lemon zest, lemon juice, and eggs, beating until smooth and well combined. It might look curdled, but thats normal
Stir in the flour and salt, mixing until fully combined. Grease a 9x13-inch baking dish and pour the batter into it, spreading it evenly. Bake in a preheated oven at 180°C (350°F) for 30-35 minutes, or until golden and set.
For the glaze, whisk together all the ingredients, adding enough lemon juice to achieve a smooth, pourable consistency. Once the bars are out of the oven, spread the glaze evenly over the hot bars. Allow them to cool completely before cutting into squares.
