Easy Spring Asparagus Fritters (Kid-Approved!)

Spring brings a burst of green to the market — and asparagus is one of the first signs the season is truly here! If you’re looking for a family-friendly recipe that’s easy for little hands to love, these crispy Asparagus Fritters are perfect. Light, flavorful, and great for dipping, they make a fun side dish, lunchbox addition, or even a quick snack.
Bonus: they sneak in extra veggies without any complaints!
Ingredients:
1 bunch fresh asparagus, trimmed and finely chopped
1 small carrot, grated
2 spring onions, finely sliced (optional)
2 large eggs
½ cup flour (you can use regular or whole wheat)
½ teaspoon baking powder
1 tablespoon olive oil (plus extra for cooking)
Salt and pepper to taste
Optional for flavor: a pinch of garlic powder or mild paprika
Instructions:
Prep the veggies: Finely chop the asparagus and grate the carrot. (Chop small so kids don’t get "big green chunks"!)
Mix the batter: In a large bowl, whisk the eggs and olive oil. Stir in the flour, baking powder, salt, and pepper to make a thick batter.
Add the veggies: Fold the chopped asparagus, carrot, and spring onions (if using) into the batter.
Cook the fritters: Heat a little olive oil in a non-stick pan over medium heat. Drop spoonfuls of the batter into the pan, flatten slightly, and cook 2–3 minutes on each side until golden and cooked through.
Serve: Cool slightly and serve with kid-friendly dips like ketchup, yogurt dip, or even mild hummus!
