This soup takes me back to my childhood, where a steaming bowl of vermicelli soup meant warmth, love, and home. My mom often made it when the weather turned chilly or when I needed a little extra comfort. The rich tomato base, buttery aroma, and soft vermicelli instantly lifted my mood. Now, I make it for my family, and it never fails to bring smiles to the table.
How to Make Vermicelli Soup
This recipe is wonderfully easy to prepare, and you can customize it with whatever vegetables you love.

Ingredients:
1 tbsp butter
2 medium tomatoes, grated
4 cups chicken or vegetable stock (optional)
1 cup mixed vegetables of your choice, chopped/diced (Colliflower, carrot, broccoli, runner beans, peas)
½ cup vermicelli pasta
Salt and pepper to taste
A pinch of red pepper flakes (optional)
Fresh parsley
Lemon wedges for serving
Instructions:
In a pot, melt the butter over medium heat. Add the grated tomatoes and cook for about 5 minutes until they release their juices.
Pour in the stock and bring to a gentle simmer. Add the diced vegetables. Let them cook until tender, about 10 minutes.
Stir in the vermicelli and cook for another 3-5 minutes until it softens.
Season with salt, pepper, and red pepper flakes if using.
Remove from heat and garnish with fresh parsley or dill.
Serve hot with a squeeze of lemon for extra brightness.
Serving Suggestions
This soup pairs beautifully with a slice of crusty bread or a simple side salad. If you want to make it heartier, you can add shredded chicken or a handful of chickpeas.
Swap the butter with olive oil to make it vegan.
